// Coconut Macaroons//

500 g dessicated coconut

1.5 cups condensed milk

1.0 cup raw sugar

175 g unsalted butter

3 raw eggs

1. cream butter using fork

2. mix brown sugar, continue mixing until equally distributed

3. add eggs, milk, mix until equally distributed

4. add coconut again mix until equally distributed

preheat oven for 10 mins, 200 deg Celsius

put it muffin pan as per photo

bake for 30 minutes until golden brown!

another boring day today. i just killed all the time by cooking corned beef,

chicken adobo and chicken hamonado. as much as possible i try not to eat beef but i don’t throw food so let it be.

ingredients for chicken adobo:

0.5 kg chicken pieces

soy sauce and vinegar according to your taste (i usually put vinegar first, soy sauce just to add color, add salt if necessary)

dash of pepper

bay leaf

karen’s touch: chili powder + chili flakes

procedure:

1. combine all ingredients and put into a boil/simmer.

2. after quite some time, probably 30 minutes, removed chicken. on the same pan,

brown garlic and add chicken without sauce (for 10 minutes)

3. include sauce, bring to simmer probably 20 minutes.

cooking time 45 minutes

pinoy style corned beef

ingredients:

garlic

onion

corned beef

karen’s touch: chili powder + flakes

1. saute onion and garlic

2. add corned beef, add salt if needed, chili flakes and powder

3. cook until beef turns to “golden” brown (around 10 minutes)

cooking time: 15-20 minutes

chicken hamonado

0.5 kg chicken pieces

onion

pineapple juice 1.5 cups

garlic

ginger

karen’s touch: chili flakes + powder

1. marinate chicken with 1 cup of pineapple juice, keep remaining juice (30 minutes, good if marinated overnight)

2. heat butter in pan, saute garlic, onion and ginger (i usually put plenty of garlic and onion)

3. put chicken without marinate, brown chicken until 3/4 cooked

4. put remaining sauce + remaining juice simmer until cook add brown sugar, salt if necessary. (probably another 15 minutes)

cooking time: 30 minutes (excluding marinate time)

in my next posts, i’ll tell why i don’t eat beef and might probably remove pork in my diet as well.
